After all the indulgences of Christmas it’s time for something healthy to cleanse the system.
1 Avocado, diced
2 Tomatoes, diced
25-50g Watercress, chopped (1-2 handfuls)
1 tbsp Mixed Seeds (I used Pumpkin and Sunflower)
2 tbsp Olive Oil
2 tsp Whole Grain Mustard
2 tsp Cider Vinegar
1 tsp Honey
Put the diced avocado, tomatoes, chopped watercress and mixed seeds into a large bowl.
Mix the olive oil, mustard, honey and vinegar in a small bowl, then pour over other ingredients and toss well.
Maybe a bit cheeky calling this a ‘recipe’, seeing as how it’s so simple, but what they hey, it’s still an idea worth sharing. It’s healthy thanks to the seeds, which contain a good variety of vitamins and minerals, and the watercress, which has lots of iron in it. There’s a wee bit of natural sugar in the honey, and proteins in the tomato and avocado, so it’s a winner all round really. Tastes nice too. 🙂
